This is no exaggeration — these are fantastic cookies.
They’re crispy and chewy at the same time.
Ingredients
- 1 cup shortening (or 1 cup butter; or 1/2
cup butter and 1/2 cup shortening)
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/4 tsp. salt
- 1 tsp. baking soda
- 2-1/2 cups rolled oats
- 1-1/4 cup flour
- 1 cup raisins
Preparation Procedures - Cream together shortening, brown sugar, and
white sugar.
- Add egg, vanilla, cinnamon, ginger, nutmeg,
salt, and baking soda and combine.
- Stir in oats, flour, and raisins.
- Roll into 1" balls and place on parchment
paper on a cookie sheet.
- Flatten balls using a floured fork.
- Bake at 350 F for 8 to 10 minutes, rotating cookie
sheets after 5 minutes.
