Ingredients
- I large potato, boiled and cut into small
bite-sized pieces (1 inch square)
- 4 breakfast sausages, cooked and cut into ½
inch lengths
- 1 small onion, chopped finely and sautéed
until translucent
- 2 pinches of pepper or to taste
- 9 eggs, beaten
- 1 cup of grated medium cheddar cheese
Preparation Procedure
- Preheat oven to 350 degrees.
- Grease an 8 inch square baking dish.
- Sprinkle cooked onion in bottom of pan.
- Sprinkle pepper to taste over onion.
- Arrange cooked potato and sausage evenly
over onion.
- Pour beaten eggs into pan. Jiggle to make
sure all ingredients are coated with egg.
- Cook on middle oven rack for 25 – 30
minutes, or until eggs are just set in the middle.
- Turn broiler on in oven, and place oven rack
near the top of the oven.
- Sprinkle grated cheese over frittata and
place on top rack of oven, under broiler.
- Watch closely for cheese to melt and
bubble. This should only take 30 seconds
or so.
- Remove from oven.
- Place on cooling rack for several minutes,
then cut into squares and serve.
