Sausage and Potato Frittata

Ingredients

  • I large potato, boiled and cut into small bite-sized pieces (1 inch square)
  • 4 breakfast sausages, cooked and cut into ½ inch lengths
  • 1 small onion, chopped finely and sautéed until translucent
  • 2 pinches of pepper or to taste
  • 9 eggs, beaten
  • 1 cup of grated medium cheddar cheese

Preparation Procedure

  1. Preheat oven to 350 degrees.
  2. Grease an 8 inch square baking dish.
  3. Sprinkle cooked onion in bottom of pan.
  4. Sprinkle pepper to taste over onion.
  5. Arrange cooked potato and sausage evenly over onion.
  6. Pour beaten eggs into pan. Jiggle to make sure all ingredients are coated with egg.
  7. Cook on middle oven rack for 25 – 30 minutes, or until eggs are just set in the middle.
  8. Turn broiler on in oven, and place oven rack near the top of the oven.
  9. Sprinkle grated cheese over frittata and place on top rack of oven, under broiler.
  10. Watch closely for cheese to melt and bubble.  This should only take 30 seconds or so.
  11. Remove from oven.
  12. Place on cooling rack for several minutes, then cut into squares and serve.
