Herb Roasted Tomatoes

Ingredients

  • 4 ripe tomatoes (2.5 lbs/1105 g)
  • 1/3 cup extra virgin olive oil (75 ml)
  • 1-1/2 tbsp apple-cider vinegar (22 ml)
  • 4 cloves garlic, peeled and finely chopped
  • 2 tbsp finely chopped basil (30 ml)
  • 1 tbsp finely chopped thyme (15 ml)
  • 1/4 tsp salt and pepper (1 ml)
  • 1/4 tsp sugar (1 ml)
  • 1 tbsp maple syrup (15ml)

Preparation Procedures

  1. Herb Roasted Tomatoes
  2. Preheat an oven to 350°F.
  3. Core the tomatoes and slice in half horizontally.
  4. Place the halves, cut side up, in a baking pan that snugly holds all the tomatoes.
  5. In a small bowl, combine the oil, apple-cider vinegar, garlic, basil, thyme and maple syrup.
  6. Drizzle the oil mixture over the cut surface of the tomatoes.
  7. Season the tomatoes with the salt, pepper and sugar.
  8. Place in the preheated oven and bake for 1½ to 2 hours or until they begin to collapse and caramelize.
  9. Remove the tomatoes from the oven and serve either hot or at room temperature.
