Ingredients
- 4 ripe tomatoes (2.5 lbs/1105 g)
- 1/3 cup extra virgin olive oil (75 ml)
- 1-1/2 tbsp apple-cider vinegar (22 ml)
- 4 cloves garlic, peeled and finely
chopped
- 2 tbsp finely chopped basil (30 ml)
- 1 tbsp finely chopped thyme (15 ml)
- 1/4 tsp salt and pepper (1 ml)
- 1/4 tsp sugar (1 ml)
- 1 tbsp maple syrup (15ml)
Preparation Procedures
- Herb Roasted Tomatoes
- Preheat an oven to 350°F.
- Core the tomatoes and slice in half
horizontally.
- Place the halves, cut side up, in a baking
pan that snugly holds all the tomatoes.
- In a small bowl, combine the oil,
apple-cider vinegar, garlic, basil, thyme and maple syrup.
- Drizzle the oil mixture over the cut surface
of the tomatoes.
- Season the tomatoes with the salt, pepper
and sugar.
- Place in the preheated oven and bake for 1½
to 2 hours or until they begin to collapse and caramelize.
- Remove the tomatoes from the oven and serve
either hot or at room temperature.
