These
cookies can be made year round. Simply substitute a different shaped cookie
cutter!

cup butter, softened
- ¾
cup sugar
- 1
egg
- ¾
teaspoon vanilla extract
- 1
¾ cups all-purpose flour
- ½
teaspoon baking powder
- ¼ teaspoon salt
Glaze
- 1
cup confectioners' sugar
- 2
tablespoons milk
- food
coloring
- (or
you can make a creamy frosting: beat together ½ c butter, 4 c confectioners'
sugar, 1 tsp vanilla extract, and 3 tbsp milk; add food colouring if desired)

Cookies
- Preheat
oven to 350 F.
- In
a mixing bowl, cream butter and sugar.
- Beat
in egg and vanilla.
- Gradually
combine dry ingredients to the creamed mixture.
- On
a lightly floured surface, roll out to 1/8-in. thickness.
- Cut
with 2½ in. cookie cutters.
- Place
1 inch apart on baking sheets, covered with parchment paper.
- Cover
and chill for 10 minutes.
- Bake
for 8-10 minutes or until lightly browned.
- Cool
on wire racks.
Glaze
- In
a small bowl, combine confectioners' sugar and milk until smooth. Stir in food
coloring.
- Lightly
spread onto cooled cookies. Let stand until glaze is set.
