Christmas Butter Cookies

These cookies can be made year round. Simply substitute a different shaped cookie cutter!

Yield:  3 dozen cookies

Ingredients

Cookies

  • ½  cup butter, softened
  • ¾ cup sugar
  • 1 egg
  • ¾ teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  •  ¼ teaspoon salt

Glaze

  • 1 cup confectioners' sugar
  • 2 tablespoons milk
  • food coloring
  • (or you can make a creamy frosting: beat together ½ c butter, 4 c confectioners' sugar, 1 tsp vanilla extract, and 3 tbsp milk; add food colouring if desired)
Preparation Procedure

Cookies

  1. Preheat oven to 350 F.
  2. In a mixing bowl, cream butter and sugar.
  3. Beat in egg and vanilla.
  4. Gradually combine dry ingredients to the creamed mixture.
  5. On a lightly floured surface, roll out to 1/8-in. thickness.
  6. Cut with 2½ in. cookie cutters.
  7. Place 1 inch apart on baking sheets, covered with parchment paper.
  8. Cover and chill for 10 minutes.
  9. Bake for 8-10 minutes or until lightly browned.
  10. Cool on wire racks.

Glaze

  1. In a small bowl, combine confectioners' sugar and milk until smooth. Stir in food coloring.
  2. Lightly spread onto cooled cookies. Let stand until glaze is set.
