Banana Oat Muffins

These are the healthiest muffins I’ve ever made. The banana is wet enough to substantially reduce the fat required in the mix and adding the whole wheat flour (and bran) ups the health quotient! If the muffins will be eaten immediately, I don't even bother putting the 2 tbsp of oil in the mix.

Ingredients

  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 2-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup oats
  • 1/2 cup bran (optional)
  • 1 egg, beaten
  • 2 tbsp oil
  • 1/4 cup buttermilk (or milk)
  • 1 cup mashed bananas
  • 1 cup raisins (optional)

Preparation Procedure

  1. Pre-heat oven to 400 degrees.
  2. Combine flour, sugar, baking powder, salt, and baking soda. Stir well to blend.
  3. Stir in oats.
  4. Add remaining ingredients and stir with a fork until dry ingredients are just moistened.
  5. Fill well-greased muffin tins two-thirds full.
  6. Bake at 400 degrees F for 18 to 20 minutes.
